- One axis at a timeWe publish the ranking rules ourselves on Methods — single-axis charts, or weighted “best for …” recipes with open weights. No silent overall score.
- Source hierarchyWhen readings disagree, a public tier ladder picks the primary cite. Highest tier wins; others stay on hover as +N — multiple reliable sources, one clear primary.
- Sourced from the top of the ladderComposition prefers USDA FoodData Central (Foundation, then SR Legacy). Smoke and method gaps use cited lab multi-sample work when USDA has no row. Industry single-sample charts sit lowest.
- Color by the numberShade follows value on the open rule you are viewing — not rank place, not a healthy/unhealthy traffic light on the whole row.
- Sourced + datedEvery number has a source and a year. Empty stays empty when we lack a method-cited reading — we do not invent cells to look complete.
